Dubai Creek Harbour, JBR & Dubai Mall
Our collaboration with Mondoux began in 2019 with the opening of their first Dubai branch at Creek Harbour, followed by JBR and Dubai Mall in subsequent years. While we did not handle the design, we played a critical role in overseeing project management across all three openings. This included coordinating with construction contractors, managing equipment sourcing and kitchen setup, and securing all technical permits and legal documentation. We also led the recruitment and training of staff to align with Mondoux’s brand standards and operational expectations. Our work ensured consistent quality and smooth rollout across multiple high-profile venues.

Licensed Lounge & Club
Kings & Queens was a licensed lounge and nightlife venue offering shisha and a vibrant club atmosphere—distinct from typical cafés or restaurants. While the interior design and contractor selection were handled externally, we provided full F&B consultancy and acted as project managers, working closely with the contractor to adjust layouts, streamline workflows, and ensure execution met operational standards. We oversaw the development of two full bars, a large professional kitchen, and the procurement of all related equipment. Our scope included menu creation and training for both bar and kitchen teams, as well as staff recruitment, onboarding, and legal compliance.



Smoothie Bar & Franchise Concept
Shaka Waka is a vibrant smoothie and juice bar concept developed and operated under the Five Star umbrella. With a presence across five+ high-footfall locations in Dubai, including Dubai Mall and JBR, the brand brings a fresh, tropical twist to everyday refreshment. Known for its colourful Hawaiian-style smoothie bowls, natural juices, and refreshing mocktails, Shaka Waka has carved out a niche in the healthy F&B segment. The brand has been active for over three years and is now available for franchising. Artisanal Gelato Kiosk
Gelato Ado is a premium ice cream kiosk developed in partnership with a Swiss entrepreneur launching his first venture in Dubai. While location sourcing is not part of our usual scope, we supported the client in securing a prime spot due to our local connections. We created a bespoke design concept, tailored to a compact retail footprint, and oversaw construction and fit-out. Our team sourced high-end gelato machinery, managed supplier relationships, and ensured all equipment met operational standards. We recruited staff, conducted training, and ensured all legal documentation and approvals were in place—delivering a turnkey solution for this boutique gelato brand.

Handcrafted Italian Pasta Concept
PastaArt is a high-quality Italian pasta concept developed by Five Star specifically for a premium food hall environment, with a scalable model fit for wider expansion. Focused on authentic handmade pasta using Italian ingredients and traditional methods, the concept delivers a genuine culinary experience in an open kitchen setting, where guests can watch chefs prepare dishes live. Five Star was responsible for creating the entire recipe catalogue and menu, ensuring both authenticity and operational efficiency. While the architectural design was handled externally, our team implemented the layout, planned kitchen workflows, and managed recruitment and staff training for the launch.

Refurbishment Project – Ritz-Carlton DIFC
Flare No. 5 was a complete refurbishment project within the Ritz-Carlton DIFC, where David Vindis led a full transformation of the venue. This included design direction, uniform styling, and the hiring and onboarding of a new team. Working closely with the head chef, David curated both the food and beverage menus, ensuring alignment with the refreshed concept and clientele. As his second full project management experience, Flare No. 5 allowed him to bring together his operational skills and creative vision, resulting in a successful relaunch of the outlet within one of Dubai’s most respected luxury hospitality environments.

White Dubai (Lounge & Night Show Concept)
During the COVID-19 restrictions, we were brought in to transform White Dubai—formerly a nightlife hotspot in Meydan—into a fully operational lounge and live-show venue with a dining focus. In response to regulations requiring seated, distanced service, we led the shift from club to licensed lounge with entertainment and a full menu. Our scope included building a brand-new kitchen, developing the menu, and implementing full F&B operations, including training of FOH and BOH staff. We also handled marketing and visual direction, overseeing all photography, advertising, and launch strategy. The result was a seamless pivot from nightlife to upscale dining and entertainment.

Sweet & Savoury Street Food Concept
Crispy Cones is a playful street food concept developed by Five Star, built around one simple idea: everything served in a cone. From crispy chicken strips, curly fries, and loaded tots to freshly baked bubble waffles and dessert cones, the menu blends sweet and savoury offerings into a fun, handheld experience. The concept is designed for mall kiosks, events, or compact storefronts, with high visual appeal and fast service. While the first location is currently in development, the brand is structured for scalable rollout and creative adaptability—offering indulgent, flavour-packed items perfect for high-traffic urban environments.

Artisanal Gelato Kiosk

Bubble Tea Kiosk – UAE Rollout
Bublify is a vibrant Czech-origin brand specializing in bubble tea and a variety of flavorful beverages, including fruit teas and milk-based drinks—with or without tapioca bubbles. As part of its UAE expansion, Five Star managed the project rollout of 2 kiosk locations, both in JBR. While we were not involved in location sourcing, we provided complete project management, covering design adaptation, construction oversight, supplier coordination, and operational compliance. Our work allowed the franchisor to deliver fully equipped, brand-compliant kiosks ready for franchisees—supporting Bublify’s seamless entry into the Dubai market.

At Elite Royal Lounge, we delivered a complete F&B concept, uniquely tailored for a compact kitchen without extraction hoods. Despite the constraints, we developed a creative menu of around 50 dishes, including a full breakfast offering. A key feature was the daily breakfast delivery service to 50 nearby apartments owned by the client—fully systemized and scheduled. We also implemented Opala, allowing guests to order and pay directly from their tables via mobile. In addition to design, kitchen planning, and financial forecasting, we managed construction, procurement, recruitment, full SOP/manual development, legal compliance, and intensive staff training.


Chimney Cake Kiosk – UAE Rollout
Twist is a specialty kiosk concept offering freshly made chimney cakes, also known as Trdelník, a traditional pastry baked on a spit and served warm. Topped with Nutella, ice cream, fruits, and other customizable fillings, the product blends visual appeal with indulgent flavors. Developed by the same founders as Bublify, Twist launched in key locations such as JBR, Mercato Mall, and Festival Plaza, with Five Star managing the project execution. Our role included layout implementation, construction coordination, branding alignment, and delivery of a turnkey kiosk setup—ensuring each outlet was fully operational and ready for franchising.
